As part of Activity 2. Process Innovation, new methods of production and delivery (significant changes in software, techniques and equipment) will be introduced for the purpose of commercializing frozen monoportion products. The development of frozen monoportions is the result of the diversification of the companys operations into the confectionary segment, which is recognized as having great potential and direction for the companys further development. New technological processes within the company: an advanced production line, monitoring of cold chain maintenance and tailor-made marketing activities are procedural prerequisites for starting production. Without the innovation of the organization and process envisaged by this project, the production and placement of monoportions on the market would not be possible.
The key functionalities of frozen monoportions (10 flavors) are determined by their technological preparation process and are primarily related to retaining the appropriate qualitative, organoleptic, sensorial, including aesthetic properties as fresh products on the day of production, while simultaneously enabling: • long-term storage at -18°C for >6 months • the possibility of quick defrosting at +4°C within 3 to 4 hours and quick use (depending on the product and recipe) • declared shelf life of 3 - 5 days after thawing (depending on the product and recipe) when stored at +4°C.
The solution is compatible with common production technologies and equipment used in the food industry, but it will be necessary to adapt some aspects of existing processes (such as standards for quality control and food safety management) to meet new requirements (HACCP, ISO 22000, ISO 9001). New equipment and technology will need to be harmonized with existing standards of maintenance and process management in order to ensure the continuity and quality of production.

By using frozen single portions, the amount of food waste is reduced because the products have a longer shelf life, which is in line with the EUs goals to reduce waste and promote sustainability. The implementation of the food safety management system (ISO 22000) and the quality management system (ISO 9001) are key industrial standards in the food industry in the EU. Their certification confirms that procedures and systems comply with international quality and safety standards. HACCP is mandatory in the EU for the food industry, and the planned certification of this system ensures compliance with food safety regulations.
Cantabile uses a modern production line that includes specialized cake machines, mixers, electric roto ovens, pastry shakers, and cooling and freezing chambers. This equipment enables the production of large quantities of monoportions with high consistency and quality. Monoportions are produced using a specially developed technological procedure that includes the use of pre-processed cheese of a specific formulation. The cheesecake is baked as a whole product, after which it is shocked, which ensures a long shelf life without the need for preservatives. Ready monoportions are frozen in shockers in order to quickly reach a low temperature and preserve the quality of the product. They are stored at temperatures of -18°C, where they can remain stable for up to 6 months.
